If so, can you please share your experiences and give references for the best book or the best instructions you used?
I know there are all kinds of online instructions, websites and so on....but I would like to find QUALITY recipes and instructions, and not waste time with crap. Not sure where to turn to.

Do you want to actually make the tofu or use it in a recipe? I cook with tofu allot. I use the organic so as not to get the GMO soybeans. It is great added to chicken soup. You can stir fry with vegetable. It takes on the flavor of the seasoning used.
There are three types soft, medium, & hard. The hard you use as meat. The soft if great in soups. Hope this helps. If you get a recipe to make tofu, I'd be interested in that! Happy cooking!

lencarol 09-12-2005, 04:25 PM My sister's husband is strictly vegan, so she makes tofu quite a bit. She will stir fry it with vegetables, and seems to taste pretty good. That is the only way I can eat it, just not a tasteful consistency. I try to make up for it by drinking alot of soy milk though.
Kristin 09-12-2005, 04:41 PM Ick. I was a vegetarian for 12 years and never got to like the stuff. I just as soon made the recipe without any meat-type product rather than use tofu.
All of the claims that it soaks up the flavors of the dish - baloney! It make the dish taste like tofu. Definitely an aquired taste.
With all of the great soy-based meat substitutes out there, why use tofu?
Meat of Wheat, Veat and Quorn make great chicken substitutes, Morningstar Farms makes "Recipe Crumbles" as a hamburger substitute - as does Garden Burger. And there are a few out there that I still would try. It's been hard to find a good beef substitute, but a marinated portabella mushroom is quite tasty, too!
But, if it's the taste of meat that you want to avoid, I guess you could go with tofu - but there is also tempen and seitan. I just never liked tofu.
CabinFever 09-12-2005, 04:47 PM Phossy, maybe you just haven't had good tofu, or not properly prepped tofu? Then again, I remember soy milk 10 years ago and it was GROSS. Maybe tofu has improved as well.
Marinated herbed tofu in stirfry or pasta or fryed with garlic and dipped in plum sauce is yummy. Would never try to eat tofu plain out of a package tho.
Harrison, I don't have any recipes per se, I just wing it and make whatever comes to mind, depending on what I have in the fridge and cupboard. Important thing to remember is that it has NO taste of its own. You need to add lots of spice and or flavorings. Marinating it is a great way to do this.
It's also good in lasagne, with spinach and other garden veggies.
If you are actually making the tofu, I can't help ya there. Never done it - I would like to try making my own soymilk one day tho.
Try a few brands and kinds of tofu til you find one you like. I'm particular to one type made by one brand, but it's a local company, so doubt it would be available in the US.

Yeah, I am actually talking about making tofu from scratch.
If anyone has a good recipe that works well for the hard kind of tofu (meat substitute), that would be nice.
I know it can be a big hassle, and I know it's easier to buy it, but I would still like to know the best way to actually make it yourself.
Anyone out there in Agelesslove world??? :D
