Preparing the mixture for baking is hard work! I'm presently creaming sugar and butter for my Christmas fruit cake. This is the hardest part.:( I'll be baking five cakes tonight.
Anyone care to help?
Who wants to complete the creaming?:bgrin2:

I just left my baby back ribs in marinade. All set for tomorrow as my mom is bringing the rest of the food.

Welcome to my kitchen Sheila. I'm almost done with the creaming, but you can take it over if you like?:bgrin2: or maybe you want to blend the fruits?

Gives a big sigh of relief (or is it dread??) that I'm going up to see my OM just in time for dinner tomorrow night. ;)
I can cook, but thank God I don't have to....though, there's also this little voice in my head that just wants to control this situation.

Ok, I'm done with creaming and I'm going to blend the fruits. Raisins, cherries, prunes and mixed peels (orange, lime) have been soaking in wine for two weeks.

That sounds yummy. Give me an easy yet interesting task or we risk ruining all your preparations! (this is why I never last in the kitchen)

How about combining the dry ingredients like flour, baking powder, cinnamon powder and nutmeg. Easy yet portion is everything as it could spoil the whole batter.

Well, the first batch is now in the oven and will bake for 1hr and 30 minutes. My sweetie isn't here so I'm making myself busy in the kitchen.
I'll donate one cake to a charity organization that feeds homeless people on Christmas Day. I'll give one to mom, one to my eldest sister and the other two will remain at my home so when all my friends drop by, they can indulge. Fruit cake is a big part of our Christmas tradition in Jamaica. Friends expect you to offer them fruit cake and sorrel drink as soon as they walk through your door. This goes on until after New Years Day.
I baked my first fruitcake without the help of mom last year. It was so good that mom expects me to supply her with at least one cake now. If I continue to get good reviews for my fruitcake then I just might take orders in the future and supply cake to people like Angel who do not last long in the kitchen; at a cost of course.:bgrin2::tongue2:

Arrgh!!!!!!!! Time to clean up. I don't like this part, but it has to be done unless I want to wake up to a dirty kitchen. I hate seeing a dirty kitchen first thing in the morning. It sets a bad tone for the day.

Kitchen is now clean and the second batch is in the oven. I'll finish baking at 1:30am. then I'll be off to bed. I'm quite please with the first batch:D
